COQ AU RIESLING

INGREDIENTS
  • 6 chicken legs, split at the joint (or a whole chicken, cut into 8 pieces)
  • Salt and freshly ground pepper
  • 1 tablespoon each butter and olive oil
  • 4 shallots, minced
  • 1 clove garlic, minced
  • 2 tablespoons Cognac
  • 1 cup dry Riesling
  • 1/2 cup chicken stock
  • 8 ounces mushrooms, quartered
  • 1/2 cup creme fraiche or sour cream
  • Chopped fresh parsley or tarragon, for garnish
DIRECTIONS

Sprinkle the chicken with salt and pepper. Heat the fat in a saute pan and brown the chicken on all sides, working in batches. When all the chicken is browned, remove it to a plate and add the shallots and garlic to the pan for 1 minute. Pour in the Cognac to deglaze. Put the chicken back in the pan. Pour in the wine and stock, cover and cook until the chicken is tender, about 20 minutes, turning once.

Meanwhile, melt a little butter in a frying pan and cook the mushrooms until golden. When the chicken is cooked, remove it to a serving platter and keep warm. Boil the cooking liquid down to sauce consistency. Stir in the creme fraiche and mushrooms. When hot, taste and correct the seasonings. Pour the sauce over the chicken, sprinkle with the parsley and serve.

PIZZA FRITA WITH TOMATO SAUCE OR HONEY

To fry the dough:
450g pizza dough (1lb)
extra virgin olive oil for frying


To make the tomato sauce:
1/4 cup extra virgin olive oil (50ml)
2 cloves garlic, cut into chunks
350g crushed tomatoes (12oz)
fresh basil, torn
salt to season
freshly grated pecorino cheese 

To make the sweet version:
2 tablespoons honey (30ml)

To start your Pizza Fritta with Tomato Sauce or Honey:

In a saucepan, heat up extra virgin olive oil for the tomato sauce. Add crushed tomatoes, garlic, salt and basil. Cook for 2 to 3 minutes.

Divide dough into 4 equal parts. Stretch and flatten out each piece with your hands to create little pizzas.

In a large skillet, heat extra virgin olive oil on high heat. Gently place each piece of dough in the hot oil and cook for about a minute on each side. Once dough is puffy and golden brown on both sides, remove from skillet and place on a paper towel to absorb excess oil.

Remove any raw garlic from the tomato sauce and spoon sauce onto fried dough. Top with freshly grated pecorino cheese and serve immediately.

For the sweet version, skip the tomato sauce and drizzle honey on the fried dough. Serve hot.

Recipe featured on this show – GRILLED FOCACCIA SANDWICH

Ingredients
14 oz pizza dough
a small bunch of rucola
1 lemon, halved
3 tbsp extra virgin olive oil
salt to season
4-5 slices prosciutto,
thinly sliced shavings of parmigiano cheese, as much as you want

To start your Grilled Foccacia Sandwich:

Stretch the dough.

Place the dough on a hot barbeque (or use a broiler and heat on low for 1-2 mins or until brown).

Allow to cook for approximately 4-5 mins on each side or until  brown on both sides.

In a bowl add rucola, and season with freshly squeezed lemon juice, olive oil and salt. Mix together.

Lay the dough flat on a plated and layer with prosciutto, rucola and parmigiano cheese.

Fold the foccacia and serve like a sandwich.
